Not Your Average Noodle Soup

THIS FRIENDS, IS NOT YOUR AVERAGE NOODLE SOUP!


Ingredients:


(All organic ingredients when possible)


Makes 4 large servings


  • 1 tbsp olive oil

  • 1/2 large white onion

  • 6 celery stalks, chopped

  • 6 carrots, peeled and chopped

  • 1 cup peas (we used frozen)

  • 6 cups veg broth

  • 1/2 head medium cauliflower, chopped

  • 1 cup pea shoots/shoot salad (we love our local brand Reclaim Organics)

  • 1/2 tsp ground ginger

  • 1 tsp garlic powder

  • 1 tsp ground turmeric

  • 1 tsp salt

  • 2 tsp ground pepper

  • 2 tsp dried oregano

  • 2 tsp dried Rosemary

  • 227 g (1 box) chickpea pasta (look for brands with simplest ingredients, we used Chickapea brand)

Directions:

Sauté oil on medium heat with onion, celery and spices for approx 5 min until onions are translucent. add carrots, peas, cauliflower and veg broth and boil on medium heat for approx 15 minutes until carrots are cooked. In the mean time cook the chickpea pasta as directed .. strain and then add to finished soup. Top with fresh pea shoots and enjoy!


Why we love this:


  • High in fiber compared to a lot of soups. The chickpea pasta is a good swap for regular white/more refined pastas. Most varieties tend to have twice the protein and four times the fiber of regular pasta. We could all use more fiber in our diet and this soup is a great way to do so. When we eat a diversity of fiber rich foods, these foods act as a prebiotic, food to feed our gut microbes. Getting enough fiber can help us with weight management (helps us feel full), is anti-inflammatory and keeps our bowels happy and regular :).

  • Pea shoots!! These sweet shoots offer a nice alternative to tradition soup toppers. Any way we can sneak in extra antioxidants (compounds found in plant structures to prevent cell damage) we do! We get ours from our local farmers market from a company called Reclaim organics! You can also grow them quite easily at home. Pea shoots offer a mild, sweet taste, in every fresh green bite. They are particularly high in vitamin C and carotenoids which can help with cellular aging among other things.
