Anti-Inflammatory Protein Balls
WHAT YOU WILL NEED

1 cup gluten-free large flake oats

1.5 scoops sun warrior mocha protein powder (could sub another plant-based protein powder but results would vary)

1/4-1/3 cup pure maple syrup (depending on the consistency of nut butter)

1/2 cup almond butter (could sub another nut butter of choice)

1/4 cup dairy-free dark chocolate chips
DIRECTIONS
Mix all ingredients in a bowl. Place in freezer for 5-10 minutes to cool dough enough to easily roll into balls. Roll into 1.5 inch balls (You could enjoy now but best enjoyed after they’ve sat for the oats to soften and absorb the wet ingredients). Place balls on a plate lined with parchment paper or in a container back in the freezer for minimum 30 minutes.
Best kept cool, we keep ours in the freezer and take out and let thaw for 5-10 minutes before enjoying or you could keep in the fridge for a few days.
