French Toast, I’m In Love


Spoil your loved one, and your gut with this high fiber, superfood french toast recipe. Perfect for Valentine’s Day as it not only looks stunning, but it also tastes delicious. Check out the why we love this for more valentines reasons to go back for seconds.



What you’ll need: (makes up to 4 servings)


Coconut whip cream:


  • 1 can full fat unsweetened coconut milk

  • 2 tsp granulated monk fruit


The night before place your can of coconut milk, a mixing bowl and beaters in the fridge to cool. When ready to eat. Open the can, scoop the solid portion into the mixing bowl and discard the liquid from the can, add the monk fruit then mix/beat until creamy.


Dairy/egg free French toast


  • 1 loaf crusty bread, we love sourdough bread and especially the whole wheat sourdough from Milk Crate because the high quality fermented flour they use

  • 1 cup plant based milk, unsweetened vanilla

  • 2 TBSP ground flax seeds

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • 1/4 tsp nutmeg

  • 1 TBSP oil for cooking


Directions:


In a shallow dish whisk the milk, flax, spices and vanilla and let it sit to thicken for 5-10 minutes.


Slice loaf into thick 1 inch slices and set aside.


Preheat frying pan or griddle to medium high heat. Lightly coat each side of the sliced bread in the milk/flax mixture and cook 3-5 min/side depending on how well done you prefer.



Chia fruit topping


  • 1 TBSP chia seeds

  • 3/4 cups mix organic fruit, for Valentine’s Day we love the red of pomegranate seeds, raspberries and strawberries, we used frozen

  • 1-2 tsp fresh lemon juice

  • 2 tsp granulated monk fruit


Mix the frozen fruit and chia in a microwave safe bowl and heat at 20 second intervals, stirring until fruit is warm. Let this sit, the chia will thicken it up so add water as needed to thin.


Putting it all together:


Layer French toast with coconut whip, and fruit topping. Enjoy immediately. As a special treat we added edible flowers (begonias) for Valentines Day. Ryan loves his drizzled with a little raw honey or you could top with a little pure maple syrup as well. Personally I found the berries and coconut cream sweet enough.
